Jangara Vegan Ramen

I have tried a few vegetarian ramen but have found the bowls lacking any depth. I was delighted by the vegan ramen at Kyushu Jangara. The soup stock is rich in umami and seasoned with soy sauce. Cool vegetable toppings of cabbage, sauteed Napa cabbage, wood ear mushrooms, green onions, nori and soy meat. Jangara’s noodles are thin and straight.

On the counter be sure to try the toppings including the beni shoga ginger and the spicy takana mustard green.

My seat was a tiny one seater in the back of the first floor. I loved it as I wasn’t bumping elbows with my neighbors at the counter. They have managed to squeeze in seats in every inch. I love it.

Kyushu Jangara has several branches in Tokyo. Their original shop, in Akihabara, is celebrating it’s 40th anniversary. It’s a popular shop so expect to queue. But, ramen is usually a quick meal so the line moves quickly. This shop also serves their signature tonkotsu pork bone ramen – which is so good I put it in my book, Food Sake Tokyo.
