
Numata nori in Kappabashi sells top quality nori. The nori is harvested in the Ariake Sea in Kyushu. There are different styles depending on where it is harvested – the terroir of the sea, or single origin. One nori also includes aonori giving it a richer flavor.

We stopped by recently and our favorite was a nori that is only harvested once every three years.

Each nori is ranked on a scale of 1 to 5 for:
flavor
crispness
meltiness
first taste
after taste
This one ranks a five (or high) in all categories. We also picked up some furikake – which I love over cheese toast. Numata san also has an umami paste made from nori with ponzu – that is vegetarian.

The nori boutique will give samples if you’re interested in purchasing. It is also duty free, so bring along your passport.

Chef @eduardogarciaguzman and his beautiful wife @gabrielalopezcruz from Mexico City stop by each time they are in Tokyo to purchase nori that is served at one of their restaurants. I believe at @maximobistrot. Chef has sent us photos of his cuisine using nori and it looks delicioso.

Tip for the cheese toast with furikake is to slice the bread about 2/3 of the way into small squares. It makes it easier to pull apart after toasting. Top with cheese and melt in a toaster oven. Then top with @numatanori furikake.

The sushi is from the @nobu Sushi Cookbook that I helped translate into English. It’s a delicious vegetarian sushi made with vinegared sushi rice, sesame seeds, myoga, and shiso. I did add some salted cucumbers. Pressed it in a oshizushi wooden box for shaping sushi. You can try using a milk carton lined with plastic wrap or parchment paper. Simply slice into thick pieces like sushi and wrap with nori.
