Smack the cucumber on a cutting board using a rolling pin or pestle until it starts to break apart. Break into smaller pieces by hand or use a knife to cut into pieces.
Add the rest of the ingredients in a bowl and mix to make the dressing. Add the cucumber pieces and mix well.
