I published my kale Caesar salad recipe two years ago, and I'm still making it on repeat. It's healthy, delicious, and great for meal prep!

While I love all the recipes I publish, I can’t say that every single one makes it into my regular rotation. Sometimes I’m just too busy testing new recipes to keep revisiting old ones.
But every once in a while, I find myself coming back to a dish I’ve shared—over and over and over again. These recipes aren’t fancy. They’re simple, healthy meals that fit into my real, everyday life.
Take this kale Caesar salad. Even though I shared the recipe two years ago, it’s still something I make nearly every week.
Here’s why I love this kale Caesar salad recipe:
- It can be a side dish or a main. It pairs perfectly with pasta or pizza for dinner, but I also love it for lunch. The creamy dressing, avocado, and croutons make it super satisfying. Roasted chickpeas pack in some plant-based protein too!
- You can meal prep it. This salad is delicious…but it has a lot of components. I like to make the croutons, roasted chickpeas, and dressing on the weekend so that I can quickly toss the salad together during the week.
- The flavors are AMAZING. Salad skeptics, even you won’t be able to resist this one! I make a vegan Caesar dressing with cashews, capers, and lemon juice. Creamy, tangy, and briny, it’s SO tasty with the crisp romaine, lush kale, and other toppings here.
- It makes me feel good. For me, nothing beats sitting down to a big bowl of greens, especially one as flavorful as this.

- Do some of the prep in advance. A little prep makes this salad a great weekday lunch or weeknight side dish. Mix up the dressing, roast the chickpeas, and toast the croutons in advance. You can also wash and massage the kale up to 4 days ahead!
- Make it vegan. Use my creamy vegan Caesar dressing and vegan Parmesan instead of actual cheese. You won’t miss it one bit!
