It’s that time of year again: Kimjiang!!
And thus, I bring to you more than 20 recipes using kimchi!
But first, what is “kimjiang” you ask?
Put simply, kimjiang is the art of kimchi-making. And right now, people all over the world (but, ngl, mostly in Korea) are rolling up their sleeves, donning their gloves, and making kimchi! Why now? Well, kimchi-making is a fairly labor intensive process. It involves lots of bending, squatting, and mixing. Hence, the cooler weather is preferable to the hot summer months! This is especially true if you’re making enough to last throughout the colder weather–which is also why kimjiang usually takes place in winter. Kimchi is meant to provide sustenance when it’s typically too cold to grow anything else.
Whether you’ve made kimchi a bunch of times or you’re a total NOOB when it comes to kimjiang, this page is perfect for you. This page is a compendium of all my kimchi-related recipes, including, of course, the recipe for the BEST Vegan Kimchi on the internets. Because, here’s the thing–once you’ve made that kimchi, you are not just stocking your fridge with a delicious Korean staple, you also have one of the most powerful flavor bombs on the planet. You can use it not just as a “banchan” (Korean side dish), but as the star of soups, stews, noodles, pasta, and more.

First things first: before you can make a recipe using kimchi, you need to make kimchi. I’ve included below the recipes for the BEST Vegan Kimchi, my mother’s White Kimchi, and the Best Vegan Fish Sauce. The latter is necessary to make the Best Vegan Kimchi (trust me).
