We partnered with our friends at Seafood from Norway to showcase fresh ways to make salmon a weeknight hero.
There are a few reasons why salmon is at the top of the hit list for weeknight dinners. It’s rich in flavor yet light and healthy; it’s a versatile protein that cooks easily and quickly; and it's got an adoring, all-ages fan base. In other words, it’s the ideal centerpiece for a winning family meal.
But here’s a hot tip: When you’re at the fish counter, look for salmon from Norway. It grows slowly in cold, clean water, which allows it to develop a firm texture and delicious taste, all year round.
I love Norwegian salmon steamed, baked, grilled, poached, slow roasted, and in soups. But in case that’s a liiiittle too broad, I’ve narrowed it down to seven of my all-time favorite recipes that let Norwegian salmon shine.
1. Black Garlic-Marinated Grilled Salmon with Charred Scallions
Chef Victoria Blamey of the tasting-menu-only Blanca restaurant in Brooklyn developed this recipe. She zhushes up your basic grilled fish by marinating the filets in an umami-rich mixture of fish sauce, red miso, black garlic, tamarind paste and sweet prunes (yes prunes!) to take grilled salmon to a whole new level.
2. Steamed Salmon with Ginger, Green Garlic, Potatoes & Miso
Roasted fingerlings make a (surprisingly) quick side dish for this light and zesty salmon that Chef Victoria likes to prep during busy weeks.
3. Norwegian Salmon with Teriyaki
To bring everyone in your family to the table, just do this to your salmon: add a touch of teriyaki, a sprinkle of toasted sesame seeds, some artfully arranged bok choy leaves, and see how they run.
4. Penne Pasta with Salmon
Expand your definition of pasta night. This twist on a weeknight staple, with hunks of salmon and mascarpone for a touch of creaminess, plus a fresh, sliced chili for some heat, will absolutely become your new go-to.
5. Nordic Salmon “Soppa”
Full of mussels, shrimp, chunks of salmon and a generous sprinkling of dill, a bowl of this creamy fish stew is as breathtaking as a gust of clear Norwegian air.
6. Perfect Roast Salmon
With a prep time of just five minutes, this is a super simple way to a classic, homey meal. The herby yogurt sauce to spoon on top is also a keeper.
7. Grilled Norwegian Salmon Fillet with Caribbean Spices
A Jerk-inspired spice blend adds warm, island vibes to grilled salmon filets, and the citrusy mango salad amps up the tropical flavor.
