Let’s make roasted green beans! These tender, caramelized beauties roast in just 15 minutes in the oven, so they’re a perfect veggie side dish for busy weeknights. Topped with flavorful garnishes like lemon zest, toasted almonds, and/or Parmesan cheese, they fit right in on a holiday table too.

To be totally honest, when I have fresh green beans on hand, my first instinct isn’t usually to roast them. Blanched and sautéed green beans are my typical go-tos. But a few weeks back, I was making a frittata for dinner. With the oven already on, I figured I might as well roast a side of green beans instead of cooking them on the stove.

The roasted green beans were quick, easy, and SO delicious, the browning from the hot oven bringing out their nutty flavor. I’m sharing the recipe below. Simple and fresh, it’s definitely joined the ranks of my go-to green bean recipes. Try it the next time you need to liven up your side dish rotation. If you’re anything like me, you’ll love it!

How to Roast Green Beans in the Oven

My method for how to roast green beans is similar to how I roast other vegetables. So good news: if you’ve mastered my roasted Brussels sprouts or roasted zucchini, you’ll be able to nail these roasted green beans too!

Start by trimming the green beans. Use a sharp knife or your hands to remove the tough stems.

  • Tip: To save time, buy pre-trimmed green beans (I like haricots verts) at the grocery store. You won’t have to do any chopping before you get the green beans in the oven!

Place them on a baking sheet (or sheets!) lined with parchment paper. The trick to perfect roasted green beans is leaving enough space on the baking sheet for the beans to brown. Arrange them in a single layer, leaving a little space around each one. If they’re too crowded, they’ll steam in each other’s moisture as they cook. Steaming=zero browning!

If needed, use two sheet pans instead of one. For reference, I use two large sheet pans when I roast a pound of green beans.

Season the beans with olive oil, salt, and pepper.

Then, roast them in a 425°F oven until they’re tender and browned in places, 14 to 16 minutes.

  • Tip: Don’t use a lower oven temp! Roasting the beans in a hot oven—at 425°F—means that they’ll be browned and caramelized by the time they’re tender. At a lower temperature, they’ll cook through before they start to brown.

Season to taste and serve!

Favorite Seasonings for Roasted Green Beans

I love roasted green beans seasoned simply with olive oil, salt, and pepper. For savory depth of flavor, I often toss them with a grated garlic clove while they’re still warm from the oven.

They go nicely with all sorts of other seasonings too. Dress them up with toppings like these:

  • a squeeze of fresh lemon juice and/or lemon zest
  • freshly grated Parmesan cheese
  • toasted almonds, pine nuts, or sesame seeds
  • fresh herbs like parsley or tarragon
  • drizzles of a sauce like creamy dill sauce or tahini dressing

A few of these garnishes will transform them from a quick weeknight side to one that’s holiday-worthy. Have fun finding a topping combination you love! (My favorite is toasted thinly sliced almonds, lemon zest, and Parm, pictured below.)
