Kitakata Shokudo in Kanda Jimbocho serves up Fukushima style ramen. The noodles are on the thicker side and are hand massaged to be a bit wavy. The flour for the noodles is Hokkaido Yume Chikara which is high gluten. The soy sauce ramen is made with niboshi dried sardines.
We got two bowls, the niku soba which included five types of chashu: duck, pork filet, pork thigh, pork belly, and pork shoulder. We also added wonton and a seasoned egg. For a small fee there was a mini donburi with tuna sashimi.
The daily special on this terribly hot day was a chilled bowl of ramen with chicken and a schmear of umeboshi paste. It was light and refreshing. All of this for only 2,850 yen ($19). I love Japan.
