Kicking off on December 5th, Niseko Confidential will be popping up this winter season with craft cocktails, curated dining offerings and cozy house party vibes. Just steps from the main ski runs in Hirafu, the bar will start the night as an après ski and dining destination, evolving into a more rowdy late night party as the evening goes on.
Niseko Confidential will be open daily from 3 p.m. offering a relaxed respite after a day on the slopes in a charming alpine cabin in the heart of Hirafu. The pop-up brings a taste of its award-winning sister venue, Tokyo Confidential, to the world-famous ski resort town, offering a warm and inviting atmosphere with high-quality craft cocktails. The traditional rustic wooden interiors come to life with a bright and eclectic selection of art from Tokyo Confidential’s collection, including art by Argentinian graphic artist Alan Berry Rhys, retro Godzilla posters, a giant inflatable maneki-neko and guerrilla style graffiti.

The bar offers a fun and creative menu of seasonal cocktails, featuring twists on classics like the Gingerbread Old Fashioned with bourbon and warming spices of gingerbread, the Honey Whiskey Sour with Bruichladdich single malt Scotch whisky, Japanese amaro, honey and lemon, and the Tokyo Banana Colada, with banana, pineapple, salted milk and umami bitters with rum. For a more refreshing option, try the Stay FrosTea with the Botanist gin, tropical green tea, lime and bitters or the Karai Margarita with Don Julio 1942 tequila, Cointreau, awamori, paprika brine, mango, green habanero and lime. And no après ski experience is complete without the shotski - cheeky shots include the savory Dashi Back with dashi, sake, pickle brine and Japanese whiskey, and the Hotshots with Sherry, Calvados, apple and cream. In addition to cocktails, a handpicked selection of unique wines and organic sakes will be available by the glass or bottle, as well as exclusive bottle service from 10pm featuring Telmont Champagne, Don Julio 1942, and Iichiko Silhouette.

Several coursed dining menus will be offered: the NC Signature “Furano Wagyu” 6-course menu (19,800 yen) and the NC Petite “Furano Wagyu” 4-course menu (17,600 yen). Each offering will change depending on market availability to highlight the season’s freshest flavors, with sample dishes such as tuna tartare crostini, arancini topped with thinly sliced Wagyu sirloin and Furano Wagyu filet mignon from Hokkaido.
Providing a truly luxurious dining experience, the NC Premium “Furano Wagyu” 6-Course Menu (39,600 yen) features exquisite ingredients like caviar, Hokkaido uni, shaved truffle, and foie gras offering an elevated take on the signature course menu.
In addition to cocktails, a handpicked selection of unique wines and organic sakes will be available by the glass or bottle, as well as exclusive bottle service from 10 p.m. featuring Telmont Champagne, Don Julio 1942, and Iichiko Silhouette.

The winter pop-up is the latest concept from EatMe, a Tokyo-based restaurant group with venues that seamlessly merge the essence of Japanese and Western hospitality.
