Around this time every year, it feels like everyone you know is either in Europe, just got back from Europe, or plotting how to get there. (And yes, we’ve all Googled how much a last-minute flight would be. Spoiler: too much.)

But even if you’re staying stateside, there are plenty of ways to channel that breezy, beautiful European energy. For us, it starts in the kitchen. Think: slow Sundays, seasonal ingredients, open-air markets, and meals that are simple but so satisfying. We’re talking pasta tossed with whatever’s fresh, grilled veggies with good cheese, and cold spritzes that taste like a vacation.

So in honor of Euro Summer Week, we’re sharing the recipes we’re making to feel like we’re on the Amalfi Coast (or Provence, or the Greek islands...) without ever leaving home. 1. Grilled eggplant & peach caprese

The salad that accidentally became the star of the meal. Burrata never hurts.

Greens, cheese, and no red sauce in sight—we’re not sure if it’s nonna-approved but we’re loving it.

7. Summer squash toasts

A simple snack that tastes like it came from a seaside café.

8. Pistachio olive oil ice cream

Nutty, silky, and not-too-sweet—we’re taking this over Dubai chocolate all summer long.
